A charming country inn in Cathar, where diners and pilgrims alike arrive on foot, eager to do justice to meat dishes that simmer for hours, illustrated by 24-hour low-temperature roast pork, or 20-hour leg of lamb roasted at 70°C. All the ingredients come solely from the surrounding local markets. The terrace with its view over the Briant valley is sumptuous.
