In his third establishment devoted to pasta, William Ledeuil crafts a kaleidoscope of pared-back tastes and flavours, starring high-flying creations from spelt, durum wheat, einkorn or tender Roussillon wheat by artisan Roland Feuillas. Chef Julien Jéquier (with stints at Le V and L’Écrin) orchestrates a balanced score in which Asian notes and fresh herbs play major supporting roles. From the exquisitely laid tables to the plating, balance is the key word, as is illustrated by his dish of coquillettes (small pasta shells) made out of fresh milled khorasan wheat flour with chicken wings, Taggiasche olives, spinach and Thai broth! Vibrant, lively and the epitome of charming!
